GC Côte Vineyard Chardonnay
Wine
By Farr GC Côte Vineyard Chardonnay is named for winery founder Gary Charles (GC) Farr and his original plantings on an exposed north facing côte (side or slope) in the Moorabool Valley.
These hillside vineyards are the backbone of the By Farr dynasty, which now extends down to son Nick Farr and his Farr Rising label.
Taken together the vineyards consist of the most suitable clones, rootstocks, trellising, management – in fact every aspect of the winemaking – which GC Farr has optimized to the terroir of the vines.
This wine is a tribute to Farr the elder. It honours what Gary Farr has achieved and provoked over a lifetime of winemaking, not only at By Farr, but to Chardonnay and Pinot Noir production nationally.
The handpicked Côte Vineyard fruit is whole bunch pressed to French oak barrels. All the solids are collected, chilled and put to barrel. Temperature controlled natural fermentation takes place.
The ferment is stirred to trigger malolactic fermentation. After nine months ageing in barrel, the wine is racked, fined and lightly filtered prior to bottling.
A green yellow, By Farr GC Côte Vineyard Chardonnay has textured fruit flavours and vineyard minerality. Its remarkable poise lasts the length of the taste. Cellaring potential is 10 years.
